Churro Cupcakes

These cupcakes or topped with a cinnamon sugar mixture and a creamy cinnamon sugar  frosting. It’s just like eating a churro but in cupcake form!  😉

Ingredients
  1. 2 1/2 cups cake flour
  2. 1 1/2 cups sugar
  3. 1 teaspoon baking soda
  4. 1 teaspoon salt
  5. 1 1/2 teaspoons cinnamon
  6. Two eggs
  7. 1 1/2 cup vegetable oil
  8. 1 cup buttermilk
  9. 1 tablespoon vanilla
  10. 1 teaspoon vinegar
  11. 1 tablespoon cinnamon
  12. 1/2 cup granulated sugar
  13. 1/2 cup melted butter
Instructions
  1. Combine butter milk vegetable oil, eggs, vinegar, and vanilla in a mixing bowl. In a separate bowl combine dry ingredients. Combine dry ingredients into wet ingredients until thoroughly combined (2 min.)
  2. Using a large ice cream scoop fill each scoop 3/4 of the way full into prepared pan lined with cupcake liners.
  3. Bake in 350° oven for 15 to 18 minutes. Be careful not to over bake.
  4. Mix 1 tablespoon of cinnamon and 1/2 cup of granulated sugar. Melt unsalted butter.
  5. While cupcakes are still warm brush on melted butter and dip it directly into cinnamon and sugar mixture.

Ingredients
  1. 1 1/2 cups softened butter
  2. 6 cups powdered sugar
  3. 1 teaspoon cinnamon
  4. 1 tablespoon vanilla
  5. 3 tablespoons evaporated milk (or whole milk)
Instructions
  1. Whisk the cinnamon into the powdered sugar.
  2. Cream softened butter until light and fluffy
  3. Add the powdered sugar to the butter in increments of three (2 cups at a time) allowing it to fully combine with the butter for each addition.
  4. Add in vanilla and evaporated milk.
  5. Mix until smooth and creamy
Notes
  1. It is important not to add all the powdered sugar at once. This will help the frosting from becoming grainy!

   A chewy, rich pecan blondie with ice cream smothered in warm Maple Butter Sauce.

Often I am in the mood for a decadent dessert but don’t want to spend the money going out to a restaurant or leaving the comfort of my own home. That is why I have made these Apple bees Maple Pecan Blondies. You can make them at home and it will save you money too!

The melted butter of the Blondies gives it a chewier, denser texture instead of a cake like consistency, something that is unique to Blondies.

This is also an amazing Blondie recipe on it’s own even without the sauce and ice cream but if you want to make it truly decadent don’t forget the extras.;)

Ingredients
  1. Blondies-
  2. 1 cup butter melted
  3. 2 cups light brown sugar packed
  4. Two eggs
  5. 1 tablespoon vanilla
  6. 1 teaspoon salt
  7. 1 teaspoon baking soda
  8. 2 cups all-purpose flour
  9. 1 1/2 cups white chocolate chip morsels
  10. 1/2 cups Pecans
  11. Maple butter glaze-
  12. 6 ounces cream cheese softened
  13. 1/4 cup +1 tablespoon melted butter
  14. 1/4 cup maple syrup
  15. 2 cups confectioners' sugar
  16. Good quality vanilla ice cream
Instructions
  1. Mix melted butter, brown sugar, eggs and vanilla.
  2. In a separate bowl mix together all-purpose flour baking soda and salt. Combine dry ingredients into let mixture. Add white chocolate chips and pecans until just combined.
  3. Spread blondie mixture into a parchment lined 9 x 13 pan. Bake at 350° for 25 to 30 minutes. Cut into 12 slices.
  4. Maple butter glaze-Cream the cream cheese then add melted butter maple syrup and confectioners sugar. Microwave for 10 to 15 seconds until mixture has thinned out. If a runnier consistency is desired add 2 tablespoons of milk.
  5. Plate one large slice of your Blondie. Add a scoop of ice cream and top it off with the Maple butter glaze.

Red Velvet Waffles with Cream Cheese Glaze

Ingredients:red velvet waffle (1 of 1)

Red velvet waffles

2 cups flour

4 tablespoons sugar

1 1/4 teaspoons soda 

3/4 teaspoon baking powder

1 tablespoon cocoa powder

1 teaspoon salt

2 eggs 

2 cups low-fat buttermilk

1/4 cup of melted butter

1/2 to 1  tablespoon red food dye

Cream cheese glaze

4 ounces cream cheese softened 

1/4 +3 tablespoons milk

1 3/4 cup powdered sugar

1 teaspoon vanilla

 

Spring Snack Mix “Bunny Bait”

Today I’ll be teaching you how to make “Bunny Bait” a spring snack mix!  

Ingredient List :
11/2 cups regular pretzels
1 cup white chocolate pretzels
2 Packages of peeps in different colors
1/2 cup sixlets
9 oz white chocolate bunnies (or white chocolate candy melts)
6 cups of light butter popcorn
Sprinkles (optional)

Perfectly Smooth Buttercream

1/2 cup unsalted softened butter 

1/2 cup salted softened butter 

4 cup sifted powdered sugar

2 teaspoon vanilla

1 teaspoon almond extract 

2 to 3 tablespoons half and half

 

Instructions:

Cream unsalted and salted butter until smooth. Add 1 cup of sifted powdered sugar and beat for two minutes, then continue the same process with the rest of the sugar. Add extracts and heavy cream and beat until smooth.

Cranberry Granola Bites

Cranberry Granola Bites

 
 
1 cup melted coconut oil
1 cup smooth peanut butter
2 cups date sugar
1 1/2 cups maple syrup
1 tablespoon vanilla
2 eggs lightly beaten
3 cup oats
1 1/4 cup dried cranberries
1 1/4 cup pumpkin seeds
1 cup shredded coconut
1 1/2 cup coconut flour
2 tablespoons Chia seeds
1 teaspoon baking powder
 
Mix together all wet ingredients (except eggs )in large baking bowl. In separate bowl mix together all dry ingredients. Combine the dry ingredients into the wet ingredients. Once combined add lightly beat eggs until well Incorporated. 
 
Use a tablespoon to measure out  1 heaping tablespoon of the mixture onto parchment paper.
 
Bake in 350° oven for 9 to 12 minutes.

MMC Sugar Cookie Recipe

Ingredients:

3/4 cupSoftened unsalted butter

3/4 cup granulated sugar

1 Egg

1 teaspoon vanilla

1/4 teaspoon baking powder

1/4 teaspoon salt

2 1/4 cup all-purposeflour

Directions:

1. Cream butter with granulated sugar until light and fluffy, then add egg and vanilla.

2. Combine baking powder salt and all-purpose flour in separate bowl.

3. Add dry ingredients into wet ingredients.

4. Place fresh cookie dough between two layers of parchment paper, roll to desired thickness (I prefer 3/8 inch). Chill in refrigerator for 30 minutes and then cut with cookie cutters.

5.Bake at 350 degrees for 10-12 minutes. Cool to room temperature before frosting.
